The German PGK steel used to make the blade gives the knife a very special edge. With a hardness of about 61-62 HRC, the blade cuts perfectly into the material, stays sharp for a long time and is resistant to French fries - PGK steel is not called D2 on steroids for nothing. Sleipner steels from Sweden and K340 from Austria are also very similar in their properties.
